For many who want fresh, homemade bread in their kitchens, the prospect of buying a fancy electronic bread maker is an appetizing one. But bread baking purists may argue as to their limitations. In truth, most bread machines do an excellent job, provided you don't intend to ask more of them than they can handle.

Among the most vital elements of making a loaf of bread without using a machine is the hands-on factor - you're handling and examining your dough every step of the way. Depending on various factors like relative humidity, altitude, the variety of yeast you're using, (or its age/health) there may be adjustments you'll need to make as you go along that a bread maker simply cannot take care of... If you simply throw your ingredients into your bread maker and there's something amiss, you might not find out about it until hours later when you open the thing up and find disappointment.

Fortunately, there are a number of 'hands-on' ways to circumvent these kinds of problems with bread makers. Firstly, it's a good idea to test your yeast out before using it in your machine. Still, there will always be some things that a bread machine simply can't do. However, if you're the type of person who wants to experiment with different bread-recipes on an ongoing basis, then you're probably the sort who'll very much enjoy the extra time and effort required to do it by hand - so the trade-off is a pretty good one either way.

But even if you want a good variety of fresh homemade bread, but don't want to trouble yourself with all the extra work you know an electronic bread maker could be doing for you, there are still quite a lot of different bread recipes specifically designed for use in a bread machine, and any good machine will have a comprehensive instruction manual giving you all the information you'll need to use it properly with many different recipes.

A bread machine is probably by far one of the most popular small kitchen appliances. Being able to smell amazing fresh baked bread through your house is also a plus.

If your one of those people who have never attempted to make home made bread because it seems like to big a task and will take to much time and effort, a bread machine will make the bread making process so much easier and enjoyable.

While browsing the internet I came across a few recipes to make in a bread machine, and they just sounded absolutely wonderful, to good to keep to myself.

Banana Nut Bread

Ingredients:

½ cup margarine, softened
2/3 cup milk
2 eggs
2 ½ cups all purpose flour
1 cup white sugar
2 ½ teaspoons baking powder
½ teaspoon baking soda
1 teaspoon salt
2/3 cup mashed bananas ( about 2-3 )
½ cup chopped walnuts

Directions:

Spray the bread machine pan with Pam or any vegetable oil spray.
Premix ingredients in the order they are in the ingredient list. Pour mixture in bread machine pan.
Select the Quick Bread or Cake cycle. Press start. Check after about one minute to see if the dough is well blended.
Cook until cake cycle stops. Remove pan, and completely cool before removing bread from the pan.

The recipe makes a 1 pound loaf with 10 servings.

French Bread

Ingredients:

1 ¼ cups water (70-80 degrees F)
2 teaspoons sugar
1 teaspoon salt
3 ½ cups bread flour
1 ½ teaspoons active dry yeast
1 tablespoon cornmeal
GLAZE
1 egg
1 tablespoon water
2 teaspoons sesame seeds, toasted

Directions:

1. In bread machine pan, place the first five ingredients in the order suggested by the manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).
2. When cycle is completed, turn dough onto a lightly floured surface. Divide in half. Roll each portion into a 10-in. x 8-in. rectangle. Roll up jelly-roll style, starting with a long side; pinch seams to seal.
3. Sprinkle a greased baking sheet with cornmeal; place loaves seam side down on prepared pan. Cover and let rise in a warm place until doubled, about 20 minutes.
4. Whisk egg and water; brush over loaves. With a sharp knife, make four shallow slashes across the top of each loaf. Sprinkle with sesame seeds if desired. Bake at 375 degrees F for 20-25 minutes or until golden brown. Cool on wire racks.

Cheesy Onion Focaccia

Ingredients:

3/4 cup water (70 to 80 degrees F)
2 tablespoons olive oil
1 teaspoon salt
2 cups bread flour
1 tablespoon sugar
1 1/2 teaspoons active dry yeast
2 medium onions, quartered and sliced
3 garlic cloves, minced
1/4 cup butter
2 teaspoons Italian seasoning
1 cup shredded Cheddar cheese
2 tablespoons grated Parmesan cheese

Directions

1. In bread machine pan, place the first six ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).
2. When the cycle is completed, turn dough onto a lightly greased 12-in. pizza pan; pat into a 10-in. circle. Cover and let rise in a warm place until doubled, about 30 minutes. Meanwhile, in a large skillet, saute onions and garlic in butter for 18-20 minutes or until golden brown. Stir in the Italian seasoning; cook 1 minute longer.
3. Using the end of a wooden spoon handle, make deep indentations 1 in. apart in dough. Top with onion mixture and cheeses. Bake at 400 degrees F for 15-18 minutes or until golden brown. Serve warm.
